This looks so fresh and yummy!

Fresh Veggie Pasta

Makes: 8 servings Cook: 7 minutes Prep: 10 minutes Grill: 12 minutes

1 pound penne pasta
3 large boneless, skinless chicken breast halves (about 1 pound)
1-1/4 teaspoons salt
1/2 teaspoon black pepper
4 tablespoons olive oil
5 cloves garlic, sliced
1 can (28 ounces) plum tomatoes in juice, broken up with a spoon
1 medium-size zucchini, trimmed, quartered lengthwise and sliced
1 medium-size sweet yellow pepper, cored, seeded and cut into strips
2 tablespoons balsamic vinegar
2 tablespoons tomato paste
1/2 cup fresh basil leaves, chopped
1/2 pound bocconcini (small fresh mozzarella balls), quartered

1. Lightly coat grill rack or grill pan with nonstick cooking spray. Heat grill or grill pan to medium high. Cook pasta following package directions. Season chicken with 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Grill chicken, about 6 minutes per side until cooked through. Set aside to cool slightly, then cut into thin strips. When pasta is done, drain and toss in a bowl with 2 tablespoons of the oil. Set aside.

Dinner

Mmmm. Yummy. Thanks Heath.

Teriyaki Salmon cooked with lemon and tomatoes
Served with rosemary potatoes and green beans

I definitely shouldn't write for a food magazine because I tried to make that sound appealing and it probably sounds gross to everyone else. But it was soooo amazing.

This was dinner recently and we took a picture because it looks so yummy and colorful. I love my husband's cooking.

Sharing a Little Something

I'm so excited for this next week. Here's what I have on the agenda as well as some family updates-

This week I'm preparing for our much needed vacation to St.George Utah for our little Family Reunion with my side of the fam. My brother Paul (22, single, RM from Tokio, tall, blond, and handsome :) is running in a marathon. We're all coming from Utah, Idaho, and Cali to cheer him on. Can't wait. Miss my fam.

No babysitting coming up this week. What am I going to do with myself? The past two weeks I've been babysitting. Week 1 a two year old, Week 2 a 10 year old. Babysitting Katie the 10 year old was amazing! I had a little helper and it was great! It gives me hope that - yes, they do grow up, and yes, kids can learn to help. Ahhhh. Someday. Maybe I'll take a nap Everyday this week? haha. Not a chance.

I have sharing time this month in Primary (church:) Its most likely my last time teaching the p.children before I move. (still no news on where, all we know is that our lease is up end of November and we HAVE to move to a bigger place) Sad face. I'm really sad thinking about it and I'm trying not to get to worked up over it. I love my calling as p.pres and I can't imagine going to relief society again. what? no kids? Well, with my princess Lexi on my lap growling. (yup, you heard right - she growls at church for no reason - just to be loud).

So - on to Lexi. She's crawling now and it seems like she always has somewhere she HAS to go. Just like her mommy. This week her shirt is constantly wet from drooling and I think its the sickest thing. She hates when I change her shirt 5 times a day so I find my self wiping her all day long to prevent the mess and she hates that too. Her first 2 teeth came in on the bottom this week. I think she also has a little bit of a cold with the teething. So along with the drooling, crawling, runny nose, and growling, she also had no voice. When she cries or babbles she has a horse voice, but no coughing - go figure. It sounds so funny hearing her with her "sexy voice" as I used to call it - now I think I'll have to come up with a better name for a girl with a horse voice. lol. Oh, I loooove that Lexi loves to cuddle with my buddy Cari so much. Whenever Lexi sees Cari she has to cuddle with her - love you girl - thanks for givin my girl Love! Yea - Lexi slept through the night for the 3rd time (she's 7 freakin' months!!!) Mommy needs more sleep!

My boy Jacob. Hmmm. What can I say about my little rascal? My friend said to me this week that she noticed he's sharing more. That's nice. He tries so hard to be nice to his sister and Lexi loves to play with Jacob's toys - cars, trucks, trains.... I just wish that he would be nice to his little friends. Currently Jacob has 2 buddies - Toby and Bradley. Its so fun to watch him get excited about playing at the park with his friends. He also LOVES his babysitter Olivia. Whenever we drive even near her house he says, "YEA! We're going to get Olivia. Are you going on date mom?" Love it. Too bad Lexi can't be as excited as Jacob whenever Heath and I go out. Poor Olivia. Jacob's birthday is coming up in November and we cannot decide what to do. I still think that 3 is too young for a real party and I have no idea who I would invite since my immediate family is so far away. When Jacob turned 12mo. my family totally drove all the way from AZ just for his B-day. So cute. Hmm, I can't remember what we did for his 2nd b-day...Journal?

Heath has been working hard this month to wrap up the summer stuff at Moxie. -note: I'm pretty much done working nights at Moxie cause Heath's been too busy- Bitter/Sweet. When Heath gets home from work - its sooooo cute - Jacob of course announces, "It's daddy!" then runs to get him. Lexi's eyes light up and she immediately reaches out for him and fusses until he comes to pick her up and give her loves. Today she was in her high chair and refused to continue eating because she HAD to see her dad. I totally don't remember Jacob being this attached to Heath. It's the cutest thing. Daddy's girl all the way.

I have always been a daddy's girl too. I love love love to talk to my dad and have always had such a great relationship with him. My mom always made sure that dad and kids had time to bond and I will always owe her for that. I didn't realize until I was an adult how rare it is to have a strong relationship with both parents. I talk to my mom everyday! Whenever I call my dad I first ask him if he's busy (giving him an out in case he doesn't have time for me) and he always responds, "Never too busy for you!". I love that. He's the Bishop in his ward and still had 3 teenage daughters- need I say more? Actually, my sister Courtney (19, Beeeeauuuutiful, strong, and talented, lives waaay to far from me, talks to me often, oh - and currently single and better stay single) lives in Idaho and is going to BYU.

I guess that wasn't 'a little something' was it. :) Nighty Night.

I love love love Corn Chowder and I usually use a recipe from my childhood. But I just went to Mimi's the other day for date night and I ordered yummy Corn Chowder and loved it!! They totally have the recipe online!!! Click here to go to their website and view this recipe and others including the French Market Onion Soup -yum! Or view below:
Mimi's Corn Chowder
(Yields 2 1/2 quarts)

4 tablespoons butter or margarine
3 cups frozen corn, thawed
6 tablespoons onion, chopped
2 tablespoons sugar
3/4 cup celery, large dice
2 teaspoons salt
2 1/2 cups hot water
1 pinch white pepper
2 cups raw potato, peeled and cut in 1/2" cubes
3 tablespoons flour
1 quart Half & Half

Method
On medium heat, melt butter, then simmer onion and celery for 5 minutes until soft, but not brown.Add water, potatoes, corn and seasonings. Cover and simmer for 30 minutes or until potatoes are barely tender.Whisk the flour into 1 cup of the Half & Half, and stir into the soup. Add the remaining 3 cups of Half & Half. Simmer for about 15 minutes until the soup has thickened to a creamy consistency.Correct the seasoning with additional salt and pepper if needed. In order to correct the consistency or the soup you may add a little milk to make it thinner. To make the soup thicker, simmer another 5-10 minutes.
Bon Appetite!

Here's My (other) Favorite Corn Chowder
*I don't know where my mom got the recipe....mom?*

1/4 c. water
1/4 c. finely chopped onion (no onion for Heath)
1/2 c. finely chopped broccoli
1 c. finely chopped cauliflower
1 c. finely chopped (or shredded) carrots
2 chopped large potatoes (optional)

Simmer the above ingredients together in salted water. Add:
1 17 oz. can corn, drained
1 17 oz. can creamed corn
1 can cream of corn soup (if you can't find this, just add another can of creamed corn)

Stir all ingredients together. Then, make cheese sauce as follows:
1/4 c. butter
1/4 c. flour
3 c. milk
4 oz. sharp cheddar cheese

Melt the butter; add flour to make a roux. Slowly add milk so that mixture stays thickened as it cooks. Add 4 oz. shredded sharp cheese and stir until smooth. Add cheese sauce to soup mixture and heat through. If you like thicker soup, double the butter and flour (but NOT the milk) for the cheese sauce and it will make a thicker soup. Soup thickens as it cools.
Mmmm. Yummy recipe's for the cold months.

CSMP

Its the morning of the primary program for church and I'm a little nervious. I've been "gathering my thoughts" for my closing remarks. Wow. I feel so much love for the children and I want to tell the parents how hard the children worked and how much I love them - I just hope that there's no crying involved. I of course have a message -short and sweet- to share. I sorta wish I was opening remarks - yikes. Wish me luck!

Lexi Rose

Here's a few pics of Lexi this week.

We went to Chick Fil A yesterday- mommy's favorite spot! Look at her wild hair. I love it!!!! Just like mom's hair.

She's starting to crawl around and here's where she ended up today. Stuck! Yup, she's crying - and what did mommy do? Grab the camera!

" Mom, are you done with the pictures? Can I come out now? "

Jacob kept saying, "Mooooommmmm Lexi doesn't like it!"

Babysitting Fun

Kira's such a cutie.
Pulling out every single toy!

Kira wearing Lexi's hat and Jacob sitting in Lexi's chair.

Playing with the girly puzzle from Target.

Playing with "Jacob's Puzzle" from Target. Cheesy smile - love it!

This week I'm babysitting my friend's daughter Kira. She's 2 and I think her birthday is only 10 days from Jacob's. She's such a cutie. Here's some pics from playing today.

To Walgreens or Not to Walgreens

I can't decide if I'm going to be a Walgreens girl or not. Hmmm. My sister in law Tenille and I are trying to decide if the hastle is worth it. I started the Walgreens thing this month and so did my friends Cari, Jen, and Tenille. *Girls do everything together* :-) Now were just trying to figure out how their SUPER COMPLEX & never Reliable System works!!! Ugh. I love to shop and I just don't think that I could give up all those great deals by skipping out on Walgreens. It doesn't help that I'm within like 4 miles of 2 Walgreens and another one within 10 miles!

WAIT!!!!!

Does anyone else have Washington Mutual? Should I switch my bank? I haven't really been keeping up with all the news but Heath thinks I should open another account to keep $ just in case. Two banks, that sounds like a pain. The economy totally stinks and I hate worrying about the price of food and gas all the time.

Sunday, September 14

Happy Day!!!

Sundays are always so challenging with my son Jacob and today is also our last practice before our Primary Program. Wish me luck today! Have a great week!!!

Date night at our favorite sushi spot. Jacks in Corona. Do you love Sushi? Have you tried it? Stop being/eating Chicken (except for Chick fil a :-) I eat All Types but I prefer eel. My updates

In 9 days my church is having the annual Primary Program (I'm the p.pres) and I'm so excited and so nervous. I'm having "closing remarks" whatever that means...and I'm not sure what I'm going to say. The kids have worked so hard learning the songs this year and I think its going to be a great program. I love our chorister Renee because she's so creative and fun - the kids love her!

I'm participating in a FHE packet exchange in late Sept early Oct and I can't wait! There's 15 of us I think and the topic I chose was "The Creation". Anyone out there have cute ideas or pictures?

October 4th is my brother Paul's marathon in St. George. We're having a little family reunion at the same time and I CANNOT WAIT! Heath and I really need a vacation this time of year because the summer is always so stressful (for those who don't know~Heath is a pest control branch mgr and works waaaay too hard---currently at work right now...time is 9:30pm. ugh)

Lexi is crawling! Time just zooms by and the milestones are coming so quickly. She's still just inching around but it's enough to make me worry. I love this age :)

Heath is turning 30 this Sunday! Happy early birthday hunny! (not that he reads my bog. lol)

That's all for now.

What to do with all that stuff you get for Cheap & Free...

Wow. This girl is my stinkin hero. I want to be amazing at coupon shopping like her and make even more money by selling it (without ebay!) Check out the pictures of her garage sale on her post. *Click on the image above* She looks like she has her own CVS!!! Hmmm, Wait...that would require me to have a garage. "Hunny, we need to buy a house so I can have a garage sale, OK?!"

Story Time at the Library - for 7 minutes...

I decided to make a list of free & cheap activities to do with my kids in my home town and surrounding cities. One of the activities on my list was the Corona Library for Story and Singing Time. We arrived at story time today about 5 minutes late because we had to park across the street and walk. Jacob pushed Lexi in her stroller and I played traffic police helping Jacob avoid hitting the parked cars. Once inside we took our place on a little blanket we brought and I started to hum along with the song. I felt dumb for not singing but I know better then to sing in front of my son.

~For those who don't know...you definitely don't want to be the mom that is too cool to sing along~ SO - I decided to try it anyways. "Itsy Bitsy Spider Ran up the Water Spout..." To my embarrassment my boy started yelling, "MOM! MOM! MOM! Stop singing!" He hates it when I sing at home and always yells my name until I stop. Ugh. I don't know why I thought that this time it would be different. So I just changed to humming again. Then even more embarrassing... After every song Jacob would say, "Yea, we're all done! Prayer Time! Let's go home!" (he does the same thing at church every Sunday...needless to say we sit in the 2nd overflow EVERY Sunday) We lasted 7 minutes - then I decided to leave when Jacob literally walked out the back door shouting, "Time for the Fish Mom!"
I told Jacob that if he was a good boy then we would look at the fish in the entrance of the library.
Deeeeep sigh. I wasn't actually embarrassed of Jacob - he's only 2 - and I'm a firm believer of this concept: As a mom, if you keep your cool when your having trouble with your kids in public then there's no reason to be embarrassed. Let people think what they want to think. What are you supposed to do - stay home? No way! That doesn't mean that its OK to be disruptive...calmly remove yourself (like we had to do) and move on to the next activity. :) So my Boy is Active... (and its killing me) Active is a Good Quality, Right?

Goals This Week

I have some goals this week. If I say them out loud (post them) then maybe I'll actually work on them...

1) Cook dinner 4 nights. Heath cooks every night (no, seriously)
2) Take more pics of Lexi.
3) Take Jacob to the park 4 times. He needs the outlet.
4) Clean out the fridge.
5) Organize my desk.

Goal Update!
Monday 9/8: I'm thinking about dinner...but that's all I'm doing with that. I took 4 pictures of Lexi today with my cell phone camera - the only issue is I can't find the mini SD thing to get it onto my computer. Hmmm. I did cart my camera everywhere we went - but didn't pull it out. Silly me. OK - entertainment for Jacob - no park today but I got him a little puzzle thing (Target $1 section), popcorn, and water and he played in the food court at Target. Sounds crazy but he loved it! Also he had a little 30 minute playdate with his buddy Toby this morning. I'm going to count that as his "outlet" for his energy today. We also did LOTS of shopping. This morning I went to Walmart @ 5am (I'm a morning person AND I wanted to go before Heath left for work at 6:30), Target @ 10am, Stater Brothers @ 12noon. Now the kiddos are taking a nap----time to work on the rest of my list? Na. Maybe we'll clean out the fridge for FHE. lol. Probably not.
Monday Night...Heath not home yet (8:10pm ) I made dinner for myself. Does that count?

Printing Online Coupons

PRINT IN BLACK AND WHITE

Tip: Sometimes the coupons print automatically without giving you the option to change the printer settings....so....to make sure I only print in Black&White I just removed my color cartridge. OR you could change the settings on the printer under the menu button (personally I don't know how) Sounds like work - but it also helps me to think before I print something in color, "Does this really NEED to be in color?"

ALL coupons that I've found print in color and have LOTS of it! Save yourself even more money by printing in Black&White. AND use cheap paper that you get for .97 at Walmart!
