I'm in trouble---I don't know what I'm cooking this week. When I don't have a plan I don't do it!!!! I think I made a list somewhere of what I'm cooking this week and I lost it. Uhhhh----improvise? I can't do it. So---this post is dedicated to..."I haven't forgotten but I'm struggling this week". When setting a goal I'm bound to run into some trouble...
Fingers crossed that I'll post my meal plan AND actually eat dinner tonight. Oh, heath made YUMMY jambalaya last night.

have you heard the crockpot cream cheese & chicken recipe?...super easy and totally yummy. You do 3-4 frozen chicken breasts, I can't remember if I cook on high or low? Depends on how hot your crockpot cooks. You cover chicken with one packet dry italian seasoning mix. Once chicken is cooked-usually you can smell it and then cut some of it if you're not sure. Add two cans cream of mushroom soup and one package-8 oz cream cheese chunked. Stir till cream cheese mostly melts. I usually set my cream cheese out so it gets room temp. Then cook on low for another hour or two-sorry so vague. Serve over rice. We usually eat it with corn and applesauce, or buttered bread, you could be healthy and do a salad. Super good. Good as leftovers too. My kids love this.
oops, I forgot to say, after the chicken cooks, shred the chicken and put back in the crockpot with the soup and cream cheese. sorry.
Thanks Melissa!!!!
