New Favorites

Jacob's smile. He finally started smiling for the camera and saying, "Cheese, smile mom"

Food Storage - I'm so into this now. Thanks Tenille! It's exciting and I totally feel that starting to get prepared totally helps to ease any fears about what's to come.

Trash Trucks - yup trash trucks! Jacob loves them and every time one comes to pick up the trash he runs to the window to announce to the world that he's come! Rips open the blinds and stands on the window pointing, "Trash truck, its a trash truck!!"

Zucchini Casserole. We had it for dinner last night. Its a recipe from my mom and it's in the Hidden Springs Ward "green" cookbook. Its yummy. Here's the recipe. I think it would be good with yellow squash too...hmmm...I'll try that next time.

Zucchini Casserole

4 medium zucchini cut ½ inch slices
¾ c. pared & sliced carrots
½ c. chopped onion
6 T. margarine
½ c. sour cream
2 ¼ c. stuffing mix
1 can cream of chicken soup

In medium pan, cook zucchini and carrots in salted water. Cook to desired doneness. Drain. In large pan, sauté onion in 4 tablespoons margarine until tender. Stir in 1 ½ cups stuffing mix, cream of chicken soup and sour cream. Gently stir in vegetables. Preheat oven to 350 degrees. Lightly butter 1 ½ quart casserole dish. Put mixture in casserole. Melt remaining margarine. Add remaining stuffing mix to margarine. Toss gently and sprinkle over casserole. Bake 30-40 minutes. Great as a meatless main dish or service as a side dish.
